1 1/2 c cashews
1/3 c melted coconut oil
3/4 c full fat coconut milk
1/3 c lemon juice
1/2 c maple syrup
1 tsp vanilla powder
homemade graham cracker pie crust

Make graham cracker crust and refrigerate while prepare the filling- To make the filling of the cheesecake, blend soaked cashew, coconut milk, lemon juice, maple syrup, vanilla powder, and coconut oil until smooth. Pour into the pan with the crust. Set in refrigerator for at least 4 hours.
