     Chia Seed Vanilla Pudding

Ingredients
1/2 c chia seed
1 14 oz can full fat coconut milk
2 tsp vanilla
1/3 c sweetner of choice
1 1/2 c hot water
 

Instructions
Mix chia seed with hot water. Mix well with a spoon. Add coconut milk, vanilla and sweetner. Mix well.
Refrigerate at least one hour to 24 hours. Makes 6 servings.
