Oven 350. Bake walnuts until golden and smell toasty, about 6 min.
Cool then chop coarsely. Use parchment or mats.
Combine sugar, cocoa, salt and walnuts in bowl and mix on low
speed until combined. Slowly add whites and vanilla. Mix on med
until slightly thickened, about 3 min. Lower oven to 325!!!!!
Scoop batter in 12 mounds ? about 3 inches apart. Bake until
glossy and lightly cracked about 15 min. Cool completely before
removing from parchment. Store in airtight container at room temp.
