     Beef Hamburgeor Sausage Stuffed Pepper Lady Lytham

Ingredients
brown rice
onion
carrot - grated
beef hamburger or sausage
 

Instructions
cCook the rice with 2 1/2 times its volume of water, bring to boil, then simmer until the water is absorbed then, if the rice is not softened to your liking, add a little more water and simmer for an extra few minutes. Chop and saute the onion in vegetable oil, after a few minutes add the chopped mushrooms and carrot (I grate the carrot as it mixes better and cooks more rapidly). The sausage/burger mix is mixed wth water and, when absorbed, add to the onion mixture and let it cook and brown for a few minutes before mixing in. Your can of course do this stage in a separate frying pan in a little oil, but create more washing up
When I made it this time, I also added 1/2 a jar of a pasta sauce mix from Lidl. This is something I haven't used previously, but it had good ingredients, including Gran Padano cheese and basil. I cook the Pepper in a little water in the microwave for about 4 minutes, having already removed the top to use as a lid, and the seeds. You could do the same with your squash or courgette, it's a quick and easy way to do it. When all is ready, season and herb your stuffing mix and pile into your vegetable of choice.
