1 Cup (4 oz) shredded cheddar cheese (I use sharp)
Additional Mexican cheese, optional
Instructions
Preheat oven to 400 deg. Cut peppers in half lengthwise and seed.
Cook sausage in large skillet over medium-high heat for 8 to 10
minutes, or until thoroughly cooked, stirring frequently. Drain.
Return meat to skillet. Add taco seasoning mix and the amount of water
indicated on package directions. Simmer according to package
directions. Then add 1 Cup cheese and mix lightly.
Filll pepper halves with sausage mixture and arrange in 13 X 9 baking
dish. Cover with foil and bake for 30 minutes until peppers are
tender. Remove foil during last 5 to 10 minutes of baking.
After baking, I like to top with Mexican cheese blend and return to
turned-off oven for a few minutes, until the cheese melts.
