     Bean fiesta salad/dip

Ingredients
2 large red peppers - chopped small
1 medium red onion - chopped small
2 cloves garlic - minced
1 can corn (I use 2 ears of fresh corn cut off the cob)
1 can black beans (15oz) - drained and rinsed
1/2 Cup cilantro - chopped
1 lime - juiced
4 Tbs. Red Wine Vinegar
1/4 Cup good olive oil
 

Instructions
Chop all the veggies, add garlic, corn and black beans.
Juice the lime right into the bowl and add cilantro, vinegar, and olive oil.
Serving Suggestions
Serve with tortilla chips. Serve over chicken or fish or on a salad
