Open Pork belly (Costco) and rinse with cold
water. Place in 1 galon ZipLock Bag.
Mix 1/4C salt, 1/4C Brown Sugar, 1 Tablespoon Fresh Ground Pepper,
and 1/4 C maple Syrup in bowl.
Spoon half of mixture over one side of pork belly that is in
ziplock bag. Turn over and spoon remaining over other
side. Remove as much air as possible from bag.

push mixture over pork belly.
After sealed, place on rimmed cookie sheet. (in
case of leakage) Place in refridgator. Every
day, turn over pork belly. This will go on
for 7 days. On the 4 day add 1/4 C maple
syrup. Continue turning over every day. On
the day 7 pour out liquid and fill bag with
cold water. Let sit for 15 minutes. Line
cookie sheet with double paper towel. Pour out
water and place in rack in cookie sheet. Pat
dry with paper towel. Place pork belly,
uncovered, in refridgator for 24 hours.
After 24 hours, Remove from Refridgator Set
smoker (or cooker) to 225 degrees. Place on
grill and cook to 150 degrees. About 3 hours.
REmove and place in refridgerator for 3 hours.
Slice to thickness desired and cook in low heat
skillet. I usually let mine cook about 30
minutes turning about every 2 minutes.
