Place potatoes in a large pot and cover with 1 in water. season with 1
tbsp salt. Bring to a boil and cook until tender. Drain and spread on a
baking sheet. Let cool for 10 min
Hear 1/4 cup of the oil in a large skillet on medium heat. Add garlic
and cook until sizzling and brown on all sides. Remove garlic with
slotted spoon. Pour half of oil into a bowl to reserve.
Add half of potatoes to skillet and cook until golden and crispy.
Transfer to platter. Repeat with remaining potatoes and oil. Season
with remaining salt.
Whisk together vinegar, mustard, sugar, pepper, and 1/4tsp salt in a
small bowl. Whisk in 1/4 cup oil. Drizzle potatoes with vinegarette and
sprinkle with oregano and garlic.
