Season chicken on both sides with salt, pepper,
and Italian seasoning. Pan fry in oil for a few
minutes on both sides until browned but not quite
done. Remove chicken and set aside.
Add garlic, tomato, most of the basil, and a
generous drizzle of balsamic to the pan. Add salt
and pepper also. Simmer, stirring, for about 5
