     CHICKEN CAPRESE

Ingredients
1 boneless skinless CHICKEN BREAST - scored
1 - 2 Lg. vine-ripened TOMATOES - diced
2-3 slices fresh MOZZARELLA
6-8 fresh BASIL LEAVES - chopped
1 head fresh GARLIC - chopped
BALSAMIC VINEGAR
OLIVE OIL
SEA SALT
coarse BLACK PEPPER
 
ITALIAN SEASONING

Instructions
Season chicken on both sides with salt, pepper, and Italian seasoning. Pan fry in oil for a few minutes on both sides until browned but not quite done. Remove chicken and set aside.
Add garlic, tomato, most of the basil, and a generous drizzle of balsamic to the pan. Add salt and pepper also. Simmer, stirring, for about 5 minutes.
Return chicken to pan, and cook covered another 6 minutes, flipping once and topping with the mozzarella. When cheese is melted, spoon tomato mix over the top and drizzle with more balsamic before serving. Garnish with more basil.
TIP !) Use the best and freshest ingredients. TIP 2) You can substitute halved cherry tomatoes. TIP 3) Freeze mozzarella for 20 minutes before slicing.
Serving Suggestions
Serve with a salad, garlic bread, and with or without pasta.
