. Separate eggs into 2 large bowls.
2. Beat egg whites with rotary beater until
stiff but not dry.
3. Using same beater, without washing, beat egg
yolks about 2 minutes. Remove beater and stir
in salt, pepper and 1/4 cup grated cheese.
4. Pour yolk mixture over egg whites and fold
into egg whites with a rubber scraper, until
almost all the white is dispersed.
5. Heat butter in large skillet over low heat.
6. Turn mixture into skillet and cook over low
heat, about 5 minutes. As eggs cook, lift outer
edges towards center, so that uncooked mixture
goes to bottom of pan. Cook until eggs are
browned on bottom and top has puffed up but is
not dry.
7. Sprinkle with remaining cheese. Place on
broiler rack about 4 inches from source of heat
and broil until top is puffy and lightly
browned.
8. Cut into pie-shaped wedges for serving.
