     Lentils with Carrots

Servings   6 1/2 cup each

3 cups water
3 cups finely diced carrot
1 cup lentils
1/4 cup minced fresh onion
1/2 tsp salt
1 bay leaf
1 TBsp butter

Combine first 6 ingredients in saucepan, bring to boil. Simmer 25 minutes, drain. Stir in butter. Discard bay leaf.
Each 1/2 cup serving 24 carbs
