     Turkey Fried Rice

Ingredients
8 oz lean ground turkey
1/2 head cauliflower rice
1/2 tsp kosher salt
6 cups fresh stir fry vegetable medley, roughly chopped
1 tbsp finely chopped garlic
1 tbsp finely chopped ginger
1 large egg, lightly beaten
1 tbsp plus 2 tsp tamari soy sauce
2 tbsp chopped fresh cilantro
 
1 lime, quartered

Instructions
Spray large nonstick skillet with cooking spray and place over medium-high heat. Add turkey and cook about 3 minutes. Transfer to bowl and reserve.
Increase heat to high and spray pan again. Add cauliflower rice and cook about 5 minutes. Transfer to turkey bowl and toss together with salt.
Spray pan again and add vegetables, ginger, garlic and cook until charred and softened, about 4-5 minutes. Push to the side. Spray open space of skillet and add egg. Cook 30 seconds. Add turkey and cauliflower back to skillet and cook and stir about 30 seconds.
Add soy sauce and mix to coat the mixture evenly. Serve with chopped cilantro and lime.
