      Slow Cooker Stew

1 lb beef stew meat
2 medium potatoes, peeled and cubed
1 can beef broth, 14.5 ounces
1 can V-8 juice, 11.5 ounces
2 celery ribs, chopped
2 medium carrots, chopped
1 medium sweet onion, chopped
3 bay leaves
1/2 tsp salt
1/2 tsp dried thyme
1/2 tsp chili powder
1/4 tsp pepper
2 tbsp cornstarch
1 tbsp cold water
1/2 cup frozen corn
1/2 cup frozen peas

In 3 quart slow cooker, combine the first 12 ingredients. Cover and cook on low for 7-8 hours. Discard bay leaves.
In a small bowl, combine cornstarch and water until smooth; stir into stew. Cover and cook on high 30 minutes on high until thickened.
