     Baked Oatmeal

Ingredients
3/4 cups steel cut oats
1/3 cup chopped raw nuts
2 tbsp flaxseed meal
1 tsp baking powder
3/4 tsp kosher salt
1 tsp ground cinnamon
2 cups unsweetened almond milk
1/3 cup pure maple syrup
 
2 tbsp melted coconut oil, cooled slightly
1 egg
1 tsp vanilla
1 cup fresh or frozen blueberries, or one chopped apple

Instructions
Preheat oven to 375. Lightly coat and 8 x 8 baking pan with cooking spray.
In a large bowl, stir oats, nuts, flaxseed, baking powder, salt, and cinnamon.
In a medium bowl, whisk almond milk, maple syrup, coconut oil, egg, and vanilla. Stir into oat mixture. Add blueberries or apple and stir again.
Transfer mixture to prepared pan and bake 55 to 60 minutes until oatmeal is set and golden brown. Cool 10 minutes. Serve with additional maple syrup, if desired.
