     GF Instant Pot Vegetable Soup

Ingredients
2 TBS Avocado Oil, 2 TBS Olive Oil
1 Sweet Onion chopped
2 TBS Minced Garlic
4 small Idaho Potatoes peeled and quartered into bite size pieces
1 14OZ can of Stewed Tomatoes and1 24 OZ can of Diced Tomatoes
3 Bay leaves
4 Medium Zuccini peeled and sliced
32 OZ Vegetable Broth and32 OZ Beef Broth
1/2 bag of small white skinned potatoes halved
 
1 sprig fresh Rosemary
1/2 or less bunch of fresh Parsley
1 1/2 TSP Sea Salt, 1 TSP Ground Pepper
1 TBS Thyme
1/2 cabbage shredded
1 can Garbonzo Beans
2 lbs Stew Meat cut into bite size pieces
2 cans of Sweet Corn
1 bag sliced carrots

Instructions
In an 8 QT Instant Pot add olive oil and heat on Sautés until hot. Add Onions and Garlic sauté until soft. Add meat and brown until browned. DeGlaze pot with wine or broth.
Add Zuccini, Potatoes and saute' an additional 5 minutes. Add in rest of vegetables and saute, another 5 minutes. Tomatoes, broth and seasonings and allow to sauté until bubbling.
Close lid on Instant Pot and cook for 30 minutes on SOUP setting. Allow pressure to release on its own and serve.
