     Cheesy Chicken Cheesesteak Sandwiches

Ingredients
2 medium chicken breast (cut into thin 1/4 inch slices)
1 teaspoon seasoned salt (I used Back Eddie's)
1-2 tablespoons olive or vegetable oil
1 tablespoon butter (optional)
1 onion sliced thin
1 bell pepper, sliced
sliced fresh mushrooms (2-4)
2 fresh hoagie rolls, split lengthwise
4 slices marble or cheddar cheese (provolone is authentic)
 
2 Tbsps mayonnaise or to taste

Instructions
Season chicken slices with seasoning salt and set aside. In a large skillet, heat about 1 tbsp. of olive oil (and the butter if desired) over medium-high heat, add bell pepper, onion and mushrooms. Cook until soft, stirring occasionally, 4-5 minutes. Remove from pan and set aside.
Add 1 more tbsp. of olive oil to the same pan if needed and heat. Stir in seasoned chicken. cook until chicken is cooked through and browned, 4-5 minutes. Return vegetables to pan and mix to combine.
Spread mayo inside sub rolls and fill with the chicken mixture. Top each with cheese slices and broil in the oven until the cheese is melted and gooey.
