Heat a cast iron dutch oven to high heat, and brown
the steaks, removing to make space if needed.
Coarse chop 1 onion & add to pot, placing the
steaks on top. Add the stock and garlic, simmer
covered over low heat for 4 hours.
Remove steaks from the pot and cube. Remove the
onion from the pot and discard. Add all remaining
ingredients and bring to a boil. Add meat back
into pot, and simmer partially covered until
vegetables begin to soften. Remove from heat and
let sit for 30 minutes, covered. Serve.
