Heat oil in medium skillet over medium heat. Add
onion and cook until softened, 2-5 minutes.
Add mustard, honey, vinegar, 1/2 tsp salt, 1/4 tsp
pepper, and red pepper if desired. Bring to a
simmer. Cook, stirring often, until slightly
thickened, 4 to 6 minutes.
