     Oatmeal Cranberry Cookies

Ingredients
1 cup butter room temperature
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups of flour
1 teaspoon of baking soda
1 teaspoon of cinnamon
1/2 teaspoon of salt
 
3 cups of old fashioned oats
1 cup of fresh cranberries, quartered
1 cup chopped pecans
1 cup of white chocolate chips

Instructions
Preheat oven to 350. In a large mixing bowl cream the butter and sugars together until creamy. Mix in eggs one at a time and then mix in vanilla. In a separate bowl, whisk together the flour, baking soda, cinnamon and salt. Add the flour mixture to the butter mixture and blend until well combined. By hand, stir in the oatmeal, cranberries, pecans and white chocolate. Drop about a tablespoon of dough on an ungreased cookie sheet, leaving about 2 inches between each cookie. Bake for 10-12 minutes until cookies are light brown around the edges. Cool on a wire rack.
Nancy Dismukes and Debbie Edson came up to bake cookies in December 2019. Nancy suggested this recipe and it was delicious. I would recommend doubling if you plan on sharing. This is a great twist to an oatmeal cookie. the cranberries are just the right touch to a holiday treat.
Serving Suggestions
coffee or a tall glass of cold milk.
