     ORZO AND CRANBERRY SALAD

2 LB DRY ORZO
2 GAL VEGETABLE STOCK
4 OZ SALT, KOSHER
1 LBS ARUGULA
4 OZ TOASTED ALMONDS
9 OZ DRIED CRANBERRIES
2 OZ CRUMBLED FETA CHEESE
2 OZ SLICED RED ONION
BELOW IS LEMON HERB OIL INGR.
 
4 OZ LEMON JUICE
1 OZ MINCED GARLIC
2 OZ FRESH BASIL
2 OZ FRESH OREGANO
2 OZ FRESH MINT
2 OZ FRESH PARSLEY
1 TBSP SALT, KOSHER
1 TSP PEPPER, WHITE GROUND
8 OZ OLIVE OIL

Instructions
LEMON HERB OIL- COMBINE ALL LISTED HERBS, MINCED GARLIC AND BLEND IN OILIVE OILD (WITH BLENDER) UNTIL OIL IS EMULSIFIED WITH HERBS. SLOWLY BLEND IN LEMON JUICE. ADD SALT AND PEPPER
ORZO SALAD- BRING VEG STOCK TO A BOIL THEN ADD 1ST LISTED SALT. SLOWLY STIR IN DRY ORZO AND CONTINUE TO STIR EVERY 2-3 MIN UNTIL ORZO IS AL DENTE. DRAIN. THEN SHOCK IN ICE WATER. DRAIN WELL. COMBINE ALMONDS, CRANBERRIES, SLICED RED ONION WITH ORZO. ADD LEMON HERB OIL TO ORZO MIXTURE THEN ADD ARUGULA AND CRUMBLED FETA CHEESE
