Place all ingredients in a double boiler or a pan on low heat. Warm until melted. Mix together well. At this point, can cover item in this sauce and then place into fridge to harden. Or can spread on a piece of parchment spread with coconut oil and allow to cool in the refrigerator and can add toppings for a bark or keep plain for a bar.
When hardened remove from parchment and break into chips. You may also choose to just make carob drops with a spoon on the parchment.
Store chips in a container in the fridge or freezer. Freeze first when want to use them in carob chip cookies.
