boil potatoes in a large pot of salted water to cover until fork tender,15-20 min. drain return potatoes to the pot,and let dry off of heat for 1 min
mash potatoes with a ricer or whip with a hand mixer on low speed. add butter and 1/2 cup of half and half to potatoes. stir in remaining half and half if needed; season with salt and pepper.
