     Flapper Pie

Ingredients
1 1/2 c graham crumbs
1/2 c Br sugar
1/3 c butter
1/2 tsp cinnamon (opt)
Mix together crumbs and remove 1/2 c for topping
Makes 2 tin foil pie plates
Filling-
2 c milk heated ( save some cold milk to mix w cornstarch)
 
2 Tbsp cornstarch mixed into cold milk
1/4 c sugar
1 tsp vanilla
When thickened add 2 egg yolks beaten and cook another 2 minutes
Cool slightly before pouring into shell
Merengue-
Beat 2 egg whites stiff
Add 3 Tbsp icing sugar

Instructions
Spread merengues on top of filling. Sprinkle crumbs over this and bake in slow oven 250F ( or 275F) 20 min til browned slightly.
