     German Apple Pancake

1/2 cup flour
1 Tablespoon sugar
1/2 teaspoon salt
2 eggs
2/3 cup half and half
1 teaspoon vanilla
2 Tablespoons butter
3-4 apples (1 1/4 lbs), diced
1/4 cup brown sugar, packed
1/4 teaspoon cinnamon
1 teaspoon fresh lemon juice
Confectioners’ sugar for dusting

Heat oven to 500 degrees Fahrenheit with oven rack in middle.
Melt butter in a 10” skillet over med-high. Sauté apples brown sugar and cinnamon about 10 minutes until golden. Take off heat and stir in the lemon juice.
Meanwhile whisk eggs, half and half and vanilla Goethe’s then whisk in dry ingredients. Pour batter in the skillet over the apples. Place skillet in oven and reduce heat to 425F.
Bake pancake about 18 minutes. Loosen edge of pancake from pan and invert onto a plate. Dust with powdered sugar and cut into wedges to serve.
