     Green Split Pea Soup

Ingredients
1/2 lb. dry green green split peas
t tsp. olive oil
1/4 lb. smoked ham
ham bone if you have one
1 small onion chopped
i tsp. minced garlic
chicken boullion - about 2-3 Tablespoons
Salt and PepperFor
2-3 carrots. sliced,
 

Instructions
After checking the peas for any foreign substances, rinse them. Soaking- for every pound of dry split peas add 6-8 cups hot water. Boil for 2 minutes then set aside for 1 hour. OR let them stand in cold water overnight. tinse and drain. Sort and rinse peas. In an 8 Qt. or larger pot (larger for more peas) pour oil and add ham ,split peas, onion and carrots; cook 5 minutes. Add 6 cups water for 1/2-1 lb. split peas and bring to a boil. Reduce heat, cover and simmer until the peas are tender. Add more hot water if necessary.
