After checking the peas for any foreign substances, rinse
them.
Soaking- for every pound of dry split peas add 6-8 cups
hot water. Boil for 2 minutes then set aside for 1 hour. OR
let them stand in cold water overnight. tinse and drain.
Sort and rinse peas. In an 8 Qt. or larger pot (larger for
more peas) pour oil and add ham ,split peas, onion and
carrots; cook 5 minutes. Add 6 cups water for 1/2-1 lb. split
peas and bring to a boil. Reduce heat, cover and simmer
until the peas are tender. Add more hot water if necessary.
