1 can - (28 oz.) no-salt-added diced tomatoes (undrained)
1 pkg. - taco seasoning mix
2 mini-blocks - (4 oz. ea.) Velveeta cheese cut into cubes
1 lime - cut into 8 wedges
Instructions
Melt butter in med. saucepan, add onions, cook 2
mins. Stir in flour until blended.
Add tomatoes, broth and seasoning mix. Bring to a
boil, simmer for 2 mins. Add chicken and Velveeta,
cook and stir for 5 mins. or until cheese is
completely melted and chicken is heated thoroughly.
Top with crushed chips. Serve with lime wedges.
Double recipe for 8 people.
