     Portuguese Sweet Bread

Ingredients
1/4 cup warm water - 110 degrees
1 tbsp active dry yeast
pinch of sugar
3/4 cup sugar
1 cup warm milk - 110 degrees
1/2 tsp salt
1/4 cub butter - room temp
4 large eggs - room temp
5 cups flour -
 

Instructions
Combine water, yeast, and a pinch of sugar in standing mixer bowl. Set aside to proof. Combine sugar, warm milk, salt and butter in a bowl the warm milk will help melt the butter. If it doesn't melt all the way, use a whisk or fork to break up the rest. It does not have to be completely melted to work with.
Divide one egg. Set aside the white for later. Add the yolk to the yeast. blend. Add remaining eggs one at a time blending in between each. Add the milk-sugar mixture and blend until combined.
Start adding the flower one cup at a time with the standard mixing attachment. Once the batter starts stiffening up and looking like dough, switch over to the kneading hook. Add enough additional flour so the dough releases from the sides but sticks to the bottom of the bowl. Then knead the dough for five more minutes.
Remove dough from bowl and roughly shape into a ball. Place in a buttered glass dish and cover with plastic wrap. Set in a warm location to rise. 1-2 hours. maybe more depending on the conditions. It will be ready when it has roughly doubled in size. Punch down the dough, Divide in two. Shape the dough into balls by pulling the sides into the middle and pushing down into the center. Set on parchment lined cookie sheets and cover with plastic wrap. Let rise for another hour or so. Once they have doubled in size again, score the tops with a knife. Mix a couple table spoons of water into the remaining egg white and brush the tops of the dough with mixture. Bake in a 350 degree oven for 40-50 minutes or until the internal temp reaches 200 degrees. Let cool completely before cutting. Enjoy!
