     Pecan Crusted Tenderloin

1 pkg. boneless pork tenderloin - 2 1/2 lbs.
Cut tenderloin into individual portions
1/2 cup flour
2 eggs lightly beaten
1/4 cup bread crumbs
1/2 cup pecans
Onions 1 tsp. finely chopped
Add 1/2 balsamic vinegar
1/2 cup heavy cream
2 TAB. butter in little pieces while stirring.
Salt and pepper

Flour, eggs, pecans, bread crumbs Dip servings into each piece. Seer pork with olive oil in skillet crust will be brown and thick. Bake in a 9 x 13 dish at 350 for 1 hour. Cover for the first 30 minutes uncovered...add a little sauce for moisture. Make Sauce over stovetop
