     Filo Zelnick

Ingredients
1 box filo
2 boxes chopped frozen spinach
1 med-large sweet onion
2 sticks butter
8 beaten eggs
1 24oz carton 4% cottage cheese samll curd
Crumbled feta cheese
Salt to taste
 

Instructions
Beat eggs & add some salt. Add the spinach, cottage cheese & stir to blend the spinach all through it. Add the crumbled feta on top last. Paint zelnick pan with melted butter, sides too. Lay 2-3 sheets of filo on it. Paint some butter on that. Then take 1 sheet filo & bring it over so some will hang off the edge of the pan. Then the next sheet lay it that way for the sides of the pan... so some filo is hanging over.
Do the next sheet the same way on the other side of the pan...painting butter each time. then you can put 2-3 sheets in the middle of the pan....paint that with butter (Not necessary to paint butter between each sheet). Then again do the ones that hang over the edge painting butter each time. Do this until you have used 2/3rds of the filo ending with 2-3 sheets in the middle.
NOTE-When painting the butter between the sheets, you don't need to use a whole lot of butter. then put in your filling. Now you will use 1 sheet of filo on top of the filling, using your fingers to crinkle it up. Paint a little butter on that. Continue to do this until all the Filo is gone...crinkling the sheets each time. At times, we can use 2 sheets. After the last sheet is on top, bring over the edges that are hanging over (like you do your regular zelnicks). The overhanging sheets will be dry & break up, but just do the best you can.
Paint butter over all the top & especially the edges that are dry. Put some flour on crust before pouring filo in pan. Taste for salt. Bake 400 degrees for 1 hour till golden brown. Check it doesn't get to dark! Bring down oven rack when baking so top don't get dark fast.
