     Skewer-Broiled Scallops

Ingredients
2 lbs. sea scallops
12-oz. can boiled baby onions
1 cup olive oil
1 cup dry sherry
1/2 cup soy sauce
1 tsp. grated ginger
1 clove garlic, minced
1/2 cup chopped parsley
 

Instructions
Wash scallops and drain onions. Thread scallops and onions alternately on skewers, leaving enough room on 1 end of each skewer to handle.
Mix remaining ingredients thoroughly in shallow flat pan of glass dish.
Arrange skewers in marinade and refrigerate overnight. Turn skewers once or twice while marinating to soak scallops and onions completely.
Next day before serving... Remove skewers from marinade and broil about 5 min, turning to assure broiling on all sides. Serve immediately.
