3 tbsps Olive Oil

1/2 cup chopped onion

1 garlic clove, minced

2 1/2 cups diced tomatoes (fresh or canned)

1/2 tsp dried oregano, crumbled

1/4 tsp sugar (or more if necessary to balance acidity of tomatoes)

1/2 tsp dried basil, crumbled
|

Salt and pepper, to taste

Instructions |
|
|
1. Heat oil in heavy saucepan over medium heat. Add onions and garlic and swear until translucent, about 5 minutes.
|

2. Add tomatoes, oregano, sugar and basil.
|
|
|
3. Simmer until thickened, stirring occasionally, about 1/2 hour. Season with salt and pepper.
