     Pear Cake

Ingredients
3 eggs
1 1/2 cup sugar
1 tsp vanilla
3/4 cup vegetable oil
3 cups flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
 
4 cups peeled, cored, chopped ripe pears
1 tsp lemon juice

Instructions
Preheat oven to 350 degrees. Peel, core and finely chop pears. Add lemon juice to keep from browning. Set aside.
In large bowl beat eggs, sugar, vanilla, and vegetable oil. Add the dry ingredients and pears alternately in small amounts until thoroughly mixed in.
I use one loaf pan and a 4 small loaf hooked together thingy and fill about half full. Bakes for 40 to 50 minutes checking with a toothpick to see if it comes out clean at the 40 minute mark.
Optional to add 1 cup chopped walnuts or pecans. I always keep some loaves in the freezer. So easy to set out on counter to defrost when you need something yummy.
Serving Suggestions
Great with ice cream or cream cheese.
