In a shallow bowl, combine Parmesan, panko and
season with salt and pepper.
In a medium bowl, whisk egg, garlic, 1Tb water and
1ts salt.
Dry and cut chicken into 1 to 1.5 inch long strips.
Dip chicken in egg mixture, and then in panko.
Press down to adhere breading. Set aside.
Heat 1/4 inch oil in large skillet. Working in
batches, cook chicken until golden, about 2 to 3
minutes per side. Place on paper towel lined plate
to drain.
