Preheat oven to 350 degrees.
Combine enchilada sauce ingredients and set
aside.
Spread 1/2 cup enchilada sauce on the bottom of
9x13 pan. Combine enchilada engredients and roll
in tortillas and put in pan. Top with rest of
sauce and cheese. Bake for 25 min. While baking,
prepare pico de gallo for topping.
6/24/20 We made this last week while Thomas's mom
was visiting. Everyone loved it and it was full
of flavor. We topped with home made pico de gallo
and avacado instead of sour cream. I split it up
between two smaller pans and used real cheese on
the boys and dairy free cheese on the other one.
Its well worth it to make the homemade enchilada
sauce!
