In a large bowl whisk together the dry ingredients, flour, sugar,
baking powder and salt. In a medium bowl mash the banana until
almost smooth. Whisk in the eggs. Add milk and vanilla and whisk
until well blended.

Pour the banana mixture and melted butter into the flour mixture.
Fold gently with a spatula until just blended. Do not overmix. It should
be thick and a bit lumpy.

Set griddle to medium heat until hot. Put 1/2 Tbl. butter and One Tbl.
oil on the griddle and swirl around until butter is melted. Using a 1/4
cup dry measure, drop the batter onto the griddle with pancakes
about 2 inches apart. Cook about 2 minutes on one side, then flip and
cook about 2 minutes more.

Wipe griddle clean between betches. Add fresh oil and butter each
time. Top with bananas and syrup. These pancakes were worth the trouble. Very light and fluffy.
