     Peach Hand Pies

Ingredients
2 fresh peaches, peeled and chopped
1 tbsp fresh lemon juice (1 lemon)
3 tbsps granulated sugar
1 tsp vanilla extract
1/4 tsp table salt
1 tsp cornstarch
1 pkg refrigerated pie crust
Cooking spray
Cinnamon Sugar
 

Instructions
Stir peaches, lemon juice, sugar, vanilla and salt in medium bowl. Let stand for 15 mins, stirring occasionally. Drain peaches, reserving 1 tbsp. liquid; Whisk cornstarch into reserved liquid; stir into drained peaches.
cut pie crusts into 8 (4 inch circles). Place about 1 tbsp. filling in center of each circle. Brush edges of dough with water or leftover liquid; fold dough over filling to form half moons. Crimp edges with fork to seal. Cut 3 small slits in top of pies. Coat pies well with cooking spray. Optional to sprinkle with Cinnamon Sugar.
Air Fryer- Place 3 pies in single layer in air fryer basket, cook at 350 until golden brown - 12 to 14 mins. Repeat with remaining pies. Optional to drizzle with glaze.
If not using an air fryer bake in oven @ 350 for 12-14 mins or until golden brown. Optional to drizzle with glaze.
Serving Suggestions
Serve with Vanilla Ice Cream, reheat in Toaster Oven, store for 3 days in container.
