     Sausage, White Bean and Kale Soup

Ingredients
1 lb pork sausage
2 carrots chopped (or shredded carrots)
2 celery stalks (chopped)
4 cloves garlic
1 bunch kale
2 cans white beans
1 yellow onion (chopped)
4 cups chicken broth
2 cups water
 
1 tbsp oil
1 tbsp italian seasoning
1 - 1 1/2 tsp salt
pepper to taste

Instructions
Brown and crumble sausage in soup pot, set aside. Add chopped veggies and oil to pot. Cook until tender. Add liquid, seasonings, beans and sausage back to pot. Simmer for about 10 min. Then, add kale. Turn to low and simmer 5-10 min more.
