     Basalmic Glazed Carrots

1 lb carrots, peeled
1/4 cup extra virgin olive oil
kosher alt
freshly ground black pepper
1 tablespoon fresh chopped thyme
1/4 honey
freshly chopped parsley for garnish

Preheat oven to 375 degrees. On a large baking sheet, drizzle carrots with oil, then season with salt and pepper. Toss until combined and bake until carrots are tender, 38 to 40 minutes Meanwhile, make balsamic glaze- In a small saucepan, combine balsalmic vinegar and honey. Simmer until reduced by half, stirring occasionally, 15 minutes(the mixture should coat the back of the spoon). Let cool slightly.
Drizzle carrots with basalmic glazze and garnish with parsley and serve warm.
