4 cups sliced leeks, white part only
4 cups diced baking potatoes, sliced thin
6 - 7 cups water
1 to 1 and 1/2 teaspoons salt or to taste
1/2 cup heavy cream
1 tablespoon fresh chives snipped
white pepper to taste

Bring the water, potatoes and leeks to a simmer in a saucepan. Add salt and white pepper to the pot and partially cover and simmer for 25 - 30 minutes until soft. Puree the soup with an immersion blender. Taste and season to taste Add cream After chilling add more cream if desire. Top each serving with snipped chives. partially the soup
