     Lemon Garlic Shrimp Skillet

1 lb. medium shrimp peeled and deveined
3 cloves garlic minced
Kosher salt and ground pepper to taste
1 1/2 tbsp. extra-virgin olive oil
1 lemon thinly sliced, plus juice of 1 lemon
1 tbsp white wine vinegar
1-2 tbsp water or broth
Freshly chopped curly parsley for garnish
1 tsp crushed red pepper flakes or to your taste

Peel and devein the shrimps and place them to a mixing bowl. Season with salt, pepper, and stir in minced garlic. Let marinate in the refrigerator for 30 minutes. Heat oil in a skillet over medium-high heat. Add shrimps and cook stirring frequently until shrimp starts to curl about 2-3 minutes. Add lemon juice, lemon slices, vinegar, water/broth, and simmer for 2 minutes more until the shrimp is fully cooked and opaque. Remove from the heat, transfer to a serving dish. Garnish with chopped parsley and red pepper flakes.
