     Blueberry Glaze for chicken or fish

2 c blueberries rinsed and stems removed
1/2 c balsamic vinegar
1/3 c real maple syrup
1 T chopped fresh rosemary or 2 T dried
1 T fresh oregano or 2 T dried
1 small onion thinly sliced or 2 shallots
Salt and Pepper
1 T olive oil
1 T butter

Heat oil and butter in pan. Add onions and cook until soft and lightly caramelized - 3 to 4 minutes. Add blueberries and cook 1 minute.
Stir in vinegar, maple syrup, rosemary, oregano, salt and pepper. Simmer for 10 minutes until blueberries have softened.
Pour the blueberry mixture over chicken or fish and bake as necessary for the meat.
