Whisk buttermilk, oil, mustard, garlic, salt and pepper to blend well.
Add chicken, turn to coat. Cover and chill overnight if possible, or a
minimum of 3 hours.
Mix the bread crumbs, cheese and flour. Remove the chicken from
buttermilk mixture. Allow excess to drip off. Add chicken to bread
crumbs and turn to cover completely. Arrange chicken, skin side up,
on racks on baking sheets. Let stand 30 minutes prior to baking.
Preheat oven to 425 deg. Drizzle butter over chicken. Bake until crisp,
golden and cooked through, about 50 minutes. Serve and enjoy.
NOTE- This is one of Mike's favorite chicken dishes.
