     Chicken Francaise

Ingredients
2 chicken cutlets
1/2 Cup flour, seasoned with kosher salt and pepper
2 eggs, beaten
1 ounce olive oil
2 ounces butter
2 ounces white wine, like Chablis
1/2 fresh lemon, juiced
1 Tbl. fresh parsley, chopped
 

Instructions
Heat olive oil in a saute' pan on medium high. Drench chicken in egg wash and coat in seasoned flour. Shake off excess.
Saute' chicken about 3 - 5 minutes per side, or until the chicken's internal temperature reaches 165 deg. Outside should be golden brown.
Add the wine, butter and lemon. Cook until the liquid reduced and thickens. Add the parsley. Pour remaining liquid over the chicken when plated.
