     One Pot Chicken Fajita

Ingredients
Medium onion, chopped
1 red pepper, chopped
1 yellow pepper, chopped
2 garlic cloves, minced
1 pound ground chicken
15 oz tomato sauce ( I used 6 oz tomato paste, remainer chicken broth)
2 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
 
1/2 tsp salt
1/4 tsp pepper
1 1/4 cup chicken broth
8 oz dry pasta (i used gluten free, Ronzoni Rotini)
1/4 cup sour cream ( i used plain yogurt)
1/2 cup grated cheddar

Instructions
Saute onion,pepper and garlic and spices in olive oil over medium heat. Add chicken and cook until chicken is no longer pink. Add tomato sauce, chicken broth and dry pasta stirring to combine. Cook until pasta is cooked (about 10 minutes). Add more chicken broth if needed to finish cooking pasta. Mixture should be creamy but thick. Stir in sour cream and cheddar cheese. Serve.
