Preheat oven to 375 F. Butter a 9 x 13 casserole
dish and set aside.
Cook the egg noodles according to the package
directions. While the egg noodles are cooking, add
1 teaspoon of olive oil to a cooking pan and brown
the ground beef with the onion until beef is
cooked through. Add minced garlic and cook an
additional 2 minutes. Add the marinara sauce, fire
roasted tomatoes, spices and toss to combine.
Drain the egg noodles and add them to the sauce
mixture, covering the noodles with sauce. Pour the
mixture into a buttered casserole dish and top
with cheddar cheese. Bake for 15 – 20 minutes or
until cheese is slightly browned and bubbling.
