     Seafood - Potato Crusted Flounder

Ingredients
1 lb. flounder fillets, thawed and patted dry
salt and pepper to taste
2 Cups instant potato flakes
2 large eggs, beaten
2 Tbl. butter
 

Instructions
Season the flounder with salt and pepper on both sides. Using two separate dishes, place the potato flakes in one and the eggs in another. Dip only one side of the fish into the flakes, then into the egg, and back into the flakes to form a thick coating.
Heat 2 Tbl. butter in a large skillet. I like to use the electric frypan for a continuous medium heat. Place flounder potato-coated side down, in the skillet for 4-5 minutes or until golden brown.
Carefully turn over fillets and cook for another few minutes until fish flakes easily.
Really Good!! The butter gave the fish a wonderful buttery flavor.
