4 cups fresh ripe tomatoes, cored, chopped
1 red bell pepper, seeded and coarsely chopped
1 small cucumber, peeled and cut into chunks
1/2 of a red, vidalia or other sweet onion, cut in chunks
1/2 tsp cumin
1 large or 2 small cloves garlic, chopped
3/4 tsp salt
5 or 6 grinds black pepper
2 tablespoons red wine or sherry vinegar
Optional sprig of fresh parsley or some fresh celery leaves

Put all ingredients in blender and puree at least one minute, until smooth. Refrigerate and serve the next day. Correct seasoning and acidity then.
Garnish with chopped vegetables (the ones used in soup) or chopped avocado, with a drizzle of olive oil on top.
