     Carrot Ginger Soup

1 onion cut up.
1 Tablespoon butter
1 pound carrots cut up. About 3 large.
3 cups broth of choice, vegetable, chicken, bone
1 Tablespoon fresh ginger grated
1/4 cup sour cream or coconut milk
Salt and pepper to taste

In a Dutch oven, melt butter and add onions. Saute for 6 minutes until softened.
Add carrots, ginger and broth. Bring to boil. Lower temperature and simmer for 40 minutes until the carrots are cooked through.
Using an immersion blender or blender, purée the soup until smooth.
Add salt and pepper to taste. Stir in sour cream. Serve.
