1/4 c granulated swerve or other low carb sweetner
2 TBS coconut oil melted
1/2 c pumpkin puree
1 tsp vanilla
1 c almond flour
2 tsp baking powder
1 tsp ground cinnamon or pumpkin spice
2 oz cream cheese softened
Cream Cheese Frosting
6 oz cream cheese softened
1//4 granulated swerve or other low carb sweetner
1 tsp vanilla
1 tbsp heavy cream
Instructions
Make bars first. Pre-heat oven to 350.
Line 8x8 pan with parchment paper,
In a bowl mix together almond flour baking
powder, cinnamon and set aside.
Beat eggs and sweetner with mixer until pale
and creamy.
Add in the coconut oil, pumpkin, cream cheese
and vanilla and mix until well combined.
Add in the almond flour mixture and mix to
combine. Pour into the prepared pan. Bake for
25-30 minuntes until a toothpick comes out
clean. Remove from oven and cool completely.
Make frosting.
Mix cream cheese, sweetener, vanilla and cream and
beat until creamy. Spread over cooled bars and
refrigerate overnite. Cut into 16 bars.
