     Michelle’s Carrot Cake

Ingredients
2 cups sugar
2 cup flour
3 cups grated carrots
2 peeled and grated apples
2 tsp baking soda
1 1/4 cup vegetable oil
4 eggs
3 tsp cinnamon
Pinch of salt
 
2 tsp vanilla
Cream Cheese Icing
8 oz cream cheese
1/2 cup butter
1 lb icing sugar
1 tsp vanilla
1 tsp orange juice

Instructions
Mix dry ingredients together. Add eggs, oil, vanilla, apples, carrots combine well. Put into a greased 9x13 pan. Bake at 350 F until a toothpick inserted in the middle comes out clean.
Beat cream cheese and butter together add orange juice and vanilla. Slowly blend in icing sugar. Ice cake when it’s completely cold.
